Different types: There are two types of almond trees. The one with pink blossoms which produces sweet almond and the one with white blossoms which produces bitter ones. First type’s seed contains fixed oil and emulsion. Until the early 20th almond oil was being used medicinally, just if it didn’t mixed with bitter ones. In its shape, bitter almond is somehow shorter and more flattened. And it has almost 50% of the fixed oil comparing to the sweet ones. Bitter almonds may yield 6-8 % of hydrogen cyanide. It is also a rich source of Oleic acid (40%).
